Recipe: Mexi Dip

Are you ready for a yummy, salty treat to spice up your next get-together? Mexi Dip is the perfect appetizer for your youth football party or small group Bible study!


Ingredients:



1 can refried beans (optional)
1 ½ cups shredded cheddar cheese, divided
1 ½ cups shredded monterey jack cheese, divided
½ cup mayonnaise
½ cup sour cream
4.25 oz. can sliced olives, drained
4 oz. can chopped green chilies, drained
2 cloves garlic, minced
3 green onions, sliced
1 medium tomato, chopped (optional)


Preheat oven to 350˚.


If using refried beans, spread evenly on the bottom of a shallow baking dish or pie dish.






In a mixing bowl, combine 1 cup of the cheddar cheese, 1 cup of the monterey jack cheese, mayonnaise, sour cream, olives, chilies, garlic, and green onions. Spread over the refried beans. Combine remaining cheese and sprinkle over the top.



Bake for 25-30 minutes or until hot and bubbly. Remove from oven and top with chopped tomatoes.



Serve hot with tortilla chips.
